Look Ma... I'm a Daring Baker!

A few months ago I kept seeing recipes for cheesecake pops over & over on all these different blogs, it was strange, but whatever. Then a few weeks later the same coincidence, but this time it wasn't pop, it was Opera Cakes! I had no idea what the heck an opera cake was or why all these random blogs I come across are making them. I noticed the thing they had in common was the phrase "Daring Baker", & because the opera cake didn't appeal to me much I moved on & forgot about it... well for a few weeks. The next month it was Danish Pastry & all the posts & pictures made me want some yummy pastry. So I really checked into this Daring Baker phenomenon & after a grueling initiation process I got accepted. (Okay, perhaps I just had to send an e-mail stating that I was interested.)

What is the Daring Bakers you ask? (I'll save you a step.) It's an online group that makes something different each month...in secret and then everyone shares their tips and ideas online! If you want to check out more about the Daring Bakers click here or here. I love to cook & especially bake, so this gave me the chance to challenge myself to new recipes every month.

The August challenge of Eclairs was given by Meeta and Tony. The recipe was from Chocolate Desserts by Pierre Hermé. It was a multi-step process, but nothing too hard... a chocolate pastry cream or custard(I opted for vanilla) for the filling, your cream puff dough (or pate choux), then a whole batch of chocolate sauce so you can use a few tablespoons to add to the chocolate glaze. I'm sure I would have been nervous about the dough if I hadn't watched my mom make eclairs numerous times. It was a long process, so I was in the kitchen all afternoon, luckily between nap time & Jeff I was able to make these alone! (I love cooking at my own pace without any little ones rushing me.) I did it, I joined the ranks of The Daring Bakers. I didn't love the narrow size & the fact that they seemed to collapse ever so slightly (that may be normal, I don't know!) they were tasty little bites!!

Great job on your eclairs! I love your blog :) Your kids are cuties. I have an almost 3 yr. old little girl and an almost 8 month old little boy--so I enjoyed reading your musings on your little ones!
